These are eggplant rolls. They have been stuffed with cheese and ham. They were suppose to be stuffed with porchuto but there was some miscommunication. The sauce is home made tomato sauce. It was very yummy.

looks good.. I actually had an idea to make sushi "rice" out of quinoa... I don't know if it would work.

Could, might have to take a more time filled approach like risotto, to use some of its starch as a binder, but I don't see why it couldn't be forced to work.

I was worried about the starch content too... But I was hoping the syrup mixture would hold it together...

Fun part about food, you can just experiment. by the syrup mix, you mean the rice vinegar and the sugar, yeah? It might/ should, just depends on how you cook the quinoa before coating it.

And your right it could work but it's been awhile since i made actual sushi that i don't know who i would tackle something like that.

maybe. cornstarch is a lot stronger than flour.

as far as binding, yes? It shouldn't drastically alter the flavor...

no it shouldn't but there is a possibility that it can changed the texture a bit. maybe. I'm not sure.

Only thing with flour/cornstarch. If you don't cook it out at least a little you'll have that, grainy taste and such.

A cornstarch slurry at the end of the rice's cook time, or while you're heating the syrup mix, to thicken that, would likely be your best bet in that route.
