Mac 'n' cheese with a stout twist from the kitchens of
thegayhare
A recipe I caged recently. Its a quick and healthier comfort food
The Sauce is a thick creamy flavor
Stout Mac and Cheese
7 ounces uncooked rotini pasta (though you can use any sort of pasta)
2 tsp canola oil
4 ounces hot turkey sausage
3/4 cup diced onion
2 1/2 tbl flour
1/2 tsp black pepper
1/8 tsp salt
1 cup Guinness Stout (though any beer will do)
1/2 cup whole milk
2.5 ounces shredded chedder
2 ounces light velveeta
cooking spray
Preheat oven to 450
Cook pasta according to package omitting salt and fat
While pasta cooks, heat large saucepan over medium-high heat. add oil, and swirl to coat.
Remove casing from sausage, add sausage, and onion to pan. cook for 6 minutes stirring to crumble
Add flour, pepper, and salt. cook for one minute stirring constantly
Stir in beer, bring to boil and cook for 3 minutes, or until thick and bubbling
Remove from heat
Stir in milk and cheese until smooth
Stir in cooked pasta
Pour mixture into a casserole dish and bake for 10 minutes or until lightly browned
I did a few things differently on this picture. I used cheese and garlic sausage rather then hot. and I realised I didn't have any beet so I used a mix of 1/3 whiskey to 2/3 ginger ale.
came out very good
